Sausage and Apple Stuffed Acorn Squash

Ingredients
- 1 ea acorn squash, halved and seeded
- 1/2 C onion, chopped
- 2 stlks celery, chopped
- 1 t fresh rosemary, chopped
- 3 cl garlic, chopped
- 1/2 lb sausage
- 1 C Panko breadcrumbs
- 1/2 C Parmigiano, grated
Instructions
- Drizzle each half of the squash with olive oil, season, roast until done, then remove from oven.
- Saute the onion, celery and rosemary until translucent, then season. Add the garlic and sausage and cook until the sausage is browned. Add the apple and cook until slightly softened. Mix in the breadcrumbs and half the Parmigiano.
- Stuff the squash halves with the meat mixture, then roast 15 minutes. Garnish with the remaining Parmigiano to brown.
- Plate and serve hot.
